Sweet Potato, Kale and Shrimp
This Sweet Potato, Kale and Shrimp dish is quick, gluten-free, healthy and easy, without sacrificing flavor!
2 tbsp extra-virgin olive oil
½ cup onion, diced
Red pepper flakes, to taste
2 garlic cloves, minced
2 cups sweet potatoes, diced
2 cups fresh shrimp
3 cups trimmed and coarsely chopped kale leaves
Ground black pepper to taste
Salt to taste
In a large skillet, add the extra virgin olive oil over medium heat. Add onions and red pepper flakes and cook until onions are soft and golden. Then add garlic and cook for about 30 seconds. Add sweet potatoes and cook until soft, about 10-15 mins. If needed, add a few tablespoons of water to help steam the sweet potatoes. Next, add the shrimp and cook for another 2-3 minutes, or until they turn pink. Then turn the heat to low and add the kale, stirring until it’s wilted. Season to taste with salt and pepper and serve hot.
Serving suggestions: Depending on your diet, This can be served over rice; with a gluten free bread; along side a fresh salad; or over noodles (gluten free or regular).
