Gluten Free Banana Walnut Bread

Prep Time: 10 minutes

Cook Time:45 minutes

Yield:1 loaf

Ingredients:

2 ripe bananas

1/2 cup coconut flour

1/2 cup almond meal

1 tsp baking soda

2 eggs

3 tbsp coconut oil

2 tbsp honey

1/4 cup organic maple syrup

1/4 cup unsweetened applesauce

1/4 cup walnuts

Directions:

Preheat oven to 350 degrees (Fahrenheit).

In a separate bowl, combine coconut flour, almond meal and baking soda.

Mash bananas in a bowl with a fork, combine eggs, coconut oil, honey, syrup, and applesauce and mix with an electric mixer.

Combine wet ingredients and dry ingredients in one bowl. Stir in walnuts by hand, then pour batter into prepared pan. Place in oven and bake for 40-50 minutes, or until a toothpick inserted in the center comes out clean.

Take out of Oven and set on wire rack to cool. Let cool completely before cutting and enjoy!

  2. This recipe sounds quite tasty. I am gluten free so was a bit concerned when I initially saw the word “bread” that I would not be able to make this but its good that it uses coconut flour. i may have to try this one out as i have started to make stuff like cereal bars and things to eat as snacks.
